smocked tofu & udon

my adaption of Harumi Kurihara's sauce for udon noodles
japanese style vegetarian noodle sauce

1 onion                                chopped
2cm ginger                         chopped
1 garlic                                chopped
1 piece of smocked tofu   gratted on a rasp
100ml Dashi
1 tbsp Sake
1 tbsp Sojasauce
2 tbsp Mirin
1 tbsp sugar
4 tbsp Awase Miso

in oil fry the onions, garlic and ginger and add later the tofu
mix together dashi, sake, soja, mirin and sugar and add the miso
add the mixture to the tofu and let simmer till it thickens in for about 15 minutes
ready

I added some chopped tomatos to have a little color!
